Whitebark is a 175-seat grill restaurant and bar that opened in November 2007 within the Westin Monache Resort, Mammoth. Located directly off the main lobby, Whitebark is a casual yet sophisticated hub that overlooks the vibrant Village at Mammoth and gondola station as well as panoramic views toward the east. The restaurant is open for breakfast, lunch and dinner and comprises a 20-seat island bar, lounge and casual dining area, a 20-seat dining counter wrapping around an open grill, main dining room, 30-seat private dining room, and a communal table with a dramatic fireplace.
Whitebark’s design is inspired by the rich history of the Mammoth area–its logging legacy as well as its proximity to some of the country’s most spectacular natural monuments (Yosemite National Park, Mono Lake, and Devils Postpile National Monument). The interior echoes the beauty of the eastern slope of the Sierras and the immediate recreational amenities of Mammoth Lakes. These elements are reflected in the materials, which include recycled lumber, cold-rolled steel, rough-milled bar tops, cable-hung granite rock and boulders (used for ceilings and room dividers), the rough log fireplace surround, and wallpaper made from digitally altered topographic maps. A contemporary version of a wood trellis is suspended from the ceiling. The materials are combined to create a contemporary, rustic, alpine atmosphere that is versatile and inviting.
Whitebark’s regional American cuisine is centered around foods prepared in view of customers at the open grill. The distinctive menu contains such items as grilled steaks, sautéed fresh fish, cast-iron aromatic pizzas, and a wide variety of plancha (metal plate grilling) prepared dishes. An extensive wine list includes vintages from the West Coast, as well as wines from Switzerland, the Italian Alps, and Alsace.
The design fosters flexibility for different moods and dayparts. Different areas can be closed off as appropriate for each service. Brunch is set up on the grill counter on integrated induction units. Lighting is controllable by zones. Guests can stop in for a full meal, evening drinks or a quick bite at any time of day.
